It's all about LOVE 2012- V's day Red Velvet Cupcakes

Happy Valentine's day 2012! This day has come around again; I still think that last year V's day was couple months ago! (link for V'sday 2011 treats:http://three-spoon.blogspot.com/2011/03/sweets-for-valentines-day.html) For my single followers, just because you hate V's day and pink stuff everywhere doesn’t mean you have to stop baking. This year I'm also single but I still enjoy the special V's day by baking the sweetest occasion treats for my lovely family, friends ,and professors.

RED VELVET CUPCAKES RASPBERRY JAM FILLINGS WITH CREAM CHEESE FROSTING TOPPED WITH HEARTED BROWNIES

Ingredients
Cupcakes:
2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
28ml Red Food Color
2 teaspoons Vanilla Extract
Vanilla Cream Cheese Frosting:
225g cream cheese, softened
1/4 cup butter, softened
2 tablespoons sour cream
2 teaspoonsPure Vanilla Extract
300g icing sugar
Raspberry jam and cupcake decoration

1.Mix flour, cocoa powder, baking soda and salt in medium bowl. Set aside.
2.Beat butter and sugar in large bowl with electric mixer on medium speed 5 minutes or until light and fluffy.

3.Beat in eggs, one at a time. Mix in sour cream, milk, and vanilla.

4. Add in red food color and mix it well.
5.Gradually beat in flour mixture on low speed until just blended. Do not overbeat.

6.Spoon the batter into 30 paper-lined muffin cups, filling each cup 2/3 full.

7.Bake 20 to 25 minutes or until toothpick inserted into cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely.

7. Use the piping tip to punch a half whole in the cupcake.

8. Fill in the whole with teaspoon of raspberry jam.

Frost with Vanilla Cream Cheese Frosting.

Beat cream cheese, softened, butter, sour cream and vanilla extract in large bowl until light and fluffy. Gradually beat in icing sugar

Top the cupcakes with hearted brownies and sprinkle them with cupcake sugar decoration.

I actually got a package wrapped and sent from the States! hehe It arrived exactly on V's day... well, it was quite unexpected and it totally made my gloomy V's day filled with my great smile! Thank you so much for the present Takahiro, I just loooooove Godiva.

Valentine's Workshop 2012 @Viva's

This year I packed all the ingredients from my house to bake Valentine's day treat at Viva's place. Shid and Mook also came and joined us to bake something cute for their love ones. Well, its kinda awkward when Im the only single one baking in her house. (sighhhhhh) Anyway, teaching them to bake is always my pleasure :) It was 5 hours of non-stop baking and cooking; we baked and cooked 4 delicious menus: V's day sugar cookies, egg tarts, Bolognese sauce angel hair, and Okonomiyaki plus Viva's mom had prepared us delicious salad and grilled vegetables.

Thaiger Bars (Thai milk tea brownie)

This menu was inspired by my previous "Greenie" which I substituted cocoa powder with green tea powder and now it has become one of my favorite self created menu. http://threesspoon.blogspot.com/2011/10/greenie-matcha-brownie.htmlMy friends always ask for greenie as soon as I feel like baking. With such success, I thought of adapting another version of brownie by substituting cocoa powder with Thai tea. First I thought of naming it "Orangie" but when I gizzled it with melted compound chocolate, it kinda look like tiger so way don't name it "THAIGER BARS"

INGREDIENTS:
flour (sifted) 1c
baking power 1/4tsp
butter 1c
sugar 1 1/4c
eggs 3
salt 1/2tsp
Thai tea leaves 3Tbsp
milk powder 1Tbsp

1. melted 1/2cup of butter, heating it to"very hot"


2.use the tea bag and dissolve thai tea


3.stir in milk powder

in a mixer bowl, combine 1/2c butter and sugar till it looks like a fluffy butter cream

add in eggs and mix them well together once again

gradually add in flour and thai tea mixture till they are nicely combined

place parchment paper on 7*6 inch pan and bake it at 180c for 20-30min
