Thailand Japan and Vietnam Flag Sugar Cookies :D

Last week I had a chance to join the Environmental forum in Vietnam organized by AEON 1% club. It was a blast and I gained lots and lots of Japanese and Vietnamese friends. They are awesome and I was very pleased to meet them. The last night of the program held the Farewell party, we are told to bring along our souvenirs from Thailand so I decided to bake them FLAG SUGAR COOKIES :) It is original and it was by me!

YOU WILL NEED


flour 2+3/4cup

baking powder 1tsp

salt 1tsP

butter (room temperature) 170g

sugar 1cup

2 large eggs

milk 1tbsp

vanilla extract 1tsp

1. sift flour, baking powder, and salt together in a bowl

2. in a different large bowl, soften the butter and add in sugar

3. add in eggs, vanilla extract, and milk

4.mix in the flour

5.wrap the dough and store it in the fridge over night


6.remove the dough from the fridge and roll it. cut the dough into rectangular shapes

7. bake them at 180c for 12 min then reduce the heat to 160c and bake again for 10min

icing 450g

meringe powder 2 tbsp

water 1/3cup

1. combine every ingredient together

2. add in several drops of food coloring and stir it well

use the paint brush to decorate the cookies

Oatmeal Cookies

I kinda like to bake with oatmeal lately and my brothers love oatmeal cookies. In this recipe I replaced raisin with sun-dried blueberries.

INGREDIENTS

2+1/4c flour

1tsp baking powder

2 eggs

1tsp baking soda

113g butter (softened)

1+1/4c brown sugar

1/2tsp salt

2tsp vanilla extract

2+1/2c oatmeal

3/4c raisin ( i used sun-dried blueberries)

1.sift together flour, baking powder, baking soda, and salt

2. in a different large mixing bowl: mix together butter, sugar, eggs, and vanilla

mix in medium speed

3.with low speed gradually add in flour

4.add in oatmeal

use spatula to blend oatmeal in the batter

5.use a small icecream scoop and place the batter 1" apart

6.use a spoon to press on the batter to be less thick (1cm) and top them with raisin

Bake it at 180c for 15min

Easter Sugar Cookies

My Easter cookies for children at St.John Church who came to Sunday Easter mass :))
Happy Easter Kids!


so you will need:

flour 2c
sugar 1c

butter 1c
2 eggs

milk 1/4

vanilla extract 1/2tsp

baking soda 1/2tsp

soften the butter


gradually add in sugar


add in eggs, one at a time


add in milk and vanilla


add in flour spoon by spoon


wrap the dough with plastic wrap and frigde it at least 2 hours


roll the dough and use the cookie cutter to cut


bake it at 175c for 15min then change the temp to 140c and bake it for another 10 min



now for the royal icing: 2c of icing sugar, 1T milk, and 1tsp of almond extract(optional)
use a tiny drop of gel food coloring
and use a clean paint brush to paint your cookies
