Lemon Square

HAPPY 21st BIRTHDAY BROTHER!

A year has gone by so fast! It's his bd again; well he's always a big fan of lemon last year i did lemon curds crepe cake...


So I flipped through my cook book to find sth lemon and Martha Stewart's lemon square strikes me.
Ingredients
Crust
1 3/4 cups all-purpose flour
12 tablespoons (1 1/2 sticks) unsalted butter, frozen
3/4 cup icing sugar, plus more for dusting
3/4 teaspoon salt
Filling
4 large eggs, lightly beaten
1/4 cup whole milk
3 tablespoons all-purpose flour
1 1/3 cups sugar
3/4 cup freshly squeezed lemon juice (about 4 lemons)
1/4 teaspoon salt

In a large bowl, whisk together flour, icing sugar, and salt.

grate butter on a cheese grater with large holes

Add butter; stir with a wooden spoon until combined and mixture looks crumbly

Transfer mixture to baking dish; press evenly onto bottom with your hands. Chill crust in freezer 15 minutes

Bake until slightly golden, 16 to 18 minutes.

Meanwhile, make filling: whisk together eggs, sugar, flour, and salt until smooth.

Stir in lemon juice and milk

pour filling mixture over hot crust. Reduce oven temperature to 160c and bake until filling is set and edges are slightly golden brown, about 18 minutes.

Grip paper; lift out dessert, and set on cutting board. With a sieve, dust with confectioners' sugar. Cut into squares.

Beer Cake

It was one of my lovely friend's birthday,Poj on October 1st. well i couldn't ask for a better birthday cake idea apart from his favorite drink, beer.

so i used the basic chiffon cake follow the link below:


BEER SAUCE

500ml beer

40g flour

50g unsalted butter

1.simply pour 500ml of beer in the saucepan

2.add in flour and stir continuously on high heat at first
Photobucket
3.stir it for 8min then change it to low heat

4.till the bubbles come up

5.remove the sauce from the heat and add in the butter. stir a little just to let the butter melt and combine well with the sauce.

now cut the cake in half

cover both layers with sauce

topped with roasted sliced almonds

Car Cake!

Well, guess what I can't effort a car for your birthday present but i can bake you a chocolate CAR CAKE!

YOU WILL NEED:
a recipe of chocolate cake (follow my link below)

1/2c sliced roasted almonds for windows

you'll need 1.5quart mixing bowl and a bread pan

use the cake cutter to discard 2 sides of the mixing bowl cake in order to make it the same side with the bread pan vertically

then spread the cake chocolate sauce to cover up the cake and stick on donuts as the wheels and create the window with sliced roasted almonds

Rilakkuma Ovaltine Cake for Ploy's BD

my friend is such a big fan of this silly looking teddy bear so in order to make her happy; i made her this Ovaltine Cake. (her favorite favor)

I used 1/2 lb of chiffon cake and 2 cupcakes.

Ovaltine Chiffon Cake:
ingredients are divided into 3 parts
1st part: 90g cake flour, 1tsp baking powder, 1T powered milk, 60g sugar, 1/2tsp salt
2nd part: 40g vegetable oil, 3 yolks, 15g Ovaltine, 80g hot water
3rd part: 3 egg whites, 1/2tsp cream of tartar, 60g sugar




Ovaltine Fudge Sauce:

1. combine the 1st part of the ingredient together

2. shift it through the seive

3.dissolve ovaltine into hot water

4.combine the 2nd part of the ingredient into a different large mixing bowl

5. add in the 1st part of the ingredient into the 2nd part

6. there come the last part. use the electric mixer with high speed till the egg white soft and fluffy like in the picture. then add in cream of tartar and guadually add in sugar. continue on mixing with highspeed.

7.shift the egg white into the batter

8.carefully fold in the egg white

9.pour the batter into a 1/2 lb mold and 2 cupcake molds

bake at 180c for 10-15 min

form a bear shape

cover the cake with Ovaltine fudge sauce and use white, black, and yellow frosting to decorate it
