Chocolate Macarons

MACAROONS! one of my favorite french pastries!! you can be very creative with it by adding all kinds of flavors. This is my first time baking macaroons so I started out with the basic yet delicious one... Chocolate!

Ingredients:

40g ground almonds (avalible at Big Bakery Siam Square soi2 or you can just mash sliced almonds)

75g icing sugar

10g cocoa powder

1 egg white

10g sugar

2 drops red food coloring

100g "all purpose chocolate sauce" click on my link below for recipe


In advance: prepare a baking sheet covered it with silicone paper

preheat the oven at 160c

1) combine ground almonds, icing sugar, and cocoa powder in a bowl2)sift them through a fine-mash sieve several times
3) whisk egg white.

4) when they begin to hold their shape, gradually add the sugar and continue to whisk until the white is firm

5) add the food coloring, drop by drop


6)mix gently with a flexible spatula until the color is uniform


7)slowly sprinkle the dry ingredients a little at a time

8)work carefully. you wanna end up with an evenly blended mixture.

9)fill a piping bag and form small macarons. well spaced on prepared baking sheet.
10)bake them for 10-15min

11) leave the macaroons in the warmest part of the room to form a crust. press lightly on one macaron to check that it is no longer sticks.


12) tranfer it from the baking sheet. put a knob of chocolate sauce in the center of the flat side of a shell. then press the flat side of a 2nd one onto the sauce.

All Purpose Chocolate Sauce

I use this recipe for chocolate sauce in almost all of my chocolate desserts: soft chocolate cake, chocolate macaroon etc.

the ingredients are divided in to 3 parts

1st part:
cocoa powder 30g
agar powder (ผงวุ้น) 1/2t
sugar 60g
milk 100g
whipping cream 150g
evaporated milk 100g
2nd part:
evaporated milk 100g
corn starch 30g
3rd part:
butter 50g

1) in a sauce pan: mix all of the 1st part ingredients together.

2) gradually stir it with hand mixer over low heat, you have to be really patient when doing this part. pls dont stop stirring it!

3) a small cup stir the second part of the ingredients together

4) about 10-15min, when the sauce start to bubble,add in the second part of the ingredients and stir it fastly till it is nice and thick then remove the sauce pan from the heat

5) add in the 3rd part of the ingredients when the sauce is still hot. stir in the butter well
6) store the sauce in the fridge till it is cold before using it.

Egg Tart


Egg Tart! One of the most delicious Portugee pastries that most people often misunderstand it as Chinese pastry since it is served in almost every Chinese resturants.


Ingredients:

readymade puff pastry (avalible at supermarket like Carrefour)

water 1+1/4c

sugar 1/2c

3 eggs

evaporated milk 110g

vanilla 1t


roll the puff pastry and mold it on a muffin pan about half a cm thick


CUSTARD

1.in a sauce pan: make a syrup by dissolve water and sugar over the heat.

remove it from the heat and wait until it is warm

when the syrup is nice and warm, add in the rest of the ingredients
stir it well with a handmixer

then sift the custard through a sieve to remove thick yolk out
carefully pour it in
bake it for 20-25min at 220c or until it's brownish-yellow
use the spatula to remove it from the mold

Packed and already to give out:)

Disney Princess Pasta Cabonara Video

srry my foreign followers, it's in Thai...
last friday night was ladies' night so me and my friends: Ernst, Khaow, and Inam ordered buy 1 gets 1 free from Pizza Company and cooked our very own Cabornara Pasta:) the party was very chill and casual, we cooked, made jello shot, ate, drank (not drunk of course), chit chatted, played card and jagga, and washed dishes lol we finally slept at 3 in the morning and woke up at 7am.

Spinach Tortillas and Pasta Carbonara : Happy Lunch with Bros:)

It was one fine afternoon when we 3 siblings are all home. (yes, it was very once in a while when we are all home!) so i decided to make them lunch (surpisingly both 2 of them came and helped) the menu is exquisite yet easy to make: Spinach ham cheese tortillas and Winnie the Pooh Pasta Cabonara.

1 recipe of spinach with cheese (dont have to bake)
4-5 sheets of tortillas
just basically wrap it :)

Winnie the Pooh Pasta Carbonara
ingredients
Winnie the Pooh Pasta 150g
2 pieces of ham (square slice)
2T Parmasan cheese
3T whipping cream
1 egg
pinch of basil salt pepper origano

Apple Pie

hot apple pie, freshy bake from an oven...ummmm...yumm! i baked this pie for my last of literture class potluck party. we ate it during final paper presentation.






ingredients
1 recipe of shortcrust pastry
apple 500g
flour 1T
brown sugar 50g
cinnamon 1/4t
peel apples

cut it into small cube size pieces
mix in the rest of the ingredients

pour it into the pie crust

over the crust and bake it for 30min at 175c

already to give out!
