Chocolate Macarons

MACAROONS! one of my favorite french pastries!! you can be very creative with it by adding all kinds of flavors. This is my first time baking macaroons so I started out with the basic yet delicious one... Chocolate!

Ingredients:

40g ground almonds (avalible at Big Bakery Siam Square soi2 or you can just mash sliced almonds)

75g icing sugar

10g cocoa powder

1 egg white

10g sugar

2 drops red food coloring

100g "all purpose chocolate sauce" click on my link below for recipe


In advance: prepare a baking sheet covered it with silicone paper

preheat the oven at 160c

1) combine ground almonds, icing sugar, and cocoa powder in a bowl2)sift them through a fine-mash sieve several times
3) whisk egg white.

4) when they begin to hold their shape, gradually add the sugar and continue to whisk until the white is firm

5) add the food coloring, drop by drop


6)mix gently with a flexible spatula until the color is uniform


7)slowly sprinkle the dry ingredients a little at a time

8)work carefully. you wanna end up with an evenly blended mixture.

9)fill a piping bag and form small macarons. well spaced on prepared baking sheet.
10)bake them for 10-15min

11) leave the macaroons in the warmest part of the room to form a crust. press lightly on one macaron to check that it is no longer sticks.


12) tranfer it from the baking sheet. put a knob of chocolate sauce in the center of the flat side of a shell. then press the flat side of a 2nd one onto the sauce.

Peanut Butter Cookies


I baked this for new year eve since my beloved teacher, kru pim, requested me. the cookie is both crispy and crunchy with nutty taste.


INGREDIENTS

1+1/2c crunchy peanut butter

1 large egg

1c brown sugar

1+1/2 flour

1/2c softened butter

1t baking powder

in a large bowl: beat peanut butter, sugar, butter until smooth. beat in egg. in a medium bowl: whisk together flour and baking powder
guadually add flour mixture, beating till combine


pinch oss dough by tablesoon

roll into balls and place 2 inches apart

using fork, press ball crisscross pattern, flattening to 1/2 inch thickness

bake cookies at 180c for 20 minutes

until lightly golden! :)

Toffee Cake!


สูตรภาษาไทย ลิ้งข้างล่างเลยค่ะ
INGREDIENTS
cake
100g cake flour
100g sugar
1/2t baking powder
3 large eggs
80g butter
1+1/3T instant coffee
1/st baking soda
10g SP
80g condensed milk
2T cocoa powder
1/4T salt
Toffee
140g butter
flour 2+1/2T
sugar 100g
condensed milk 100g
instant coffee 1+1/2t
baked+chopped cashew nuts 180g
CAKE
heat the milk and add in coffee, stir it well
strain together flour+baking power+baking soda
add in sugar,salt, coffee milk, and eggs
low speed
add in SP and change the speed to high
mix it for 7 minutes till the batter is white
in a small bowl: melted the butter and mix in cocoa powder
guadually add the cocoa mixture into the batter in 2 minutes,low speed
after that change it to high for 20 seconds
pour it into the 10x11baking pan
bake it for 20 minutes at 175c

TOFFEE
melt the butter in a saucepan
then add in coffee milk,sugar,flour use the hand mixer to stir the toffee
till it is boiled and sticky
add in chopped cashew nuts

pour the toffee on top of the cake and bake using only upper heat at 250c
wait till it is room temperature and it into pieces
nicely packed, ready to give out!

Cashew nuts and banana cake :)


while i was jogging today, my mom calleed and asked me to bake a banana cake to visit grandma tmrw. the recipe is the same as my previous chocolate banana yogurt cake entry except instead of chocolate frosting, i changed it to chopped cashew nuts as a topping. thttp://sweetscheme.blogspot.com/2010/06/chocolate-banana-yogurt-cake.html

150g of flour, 1/2t baking powder, baking soda, salt


2 eggs

50g of yogurt

2 bananas
mashed
60g softened butter

1 cups of cashew nuts, chopped

bake it at 180c for 30 min

check it with toothpick


sliced up and packed!
