Banana Custard Cream Pie


The structure of Banana Custard Cream Pie is pretty much alike Banoffee pie except it is custard, not caramel. The custard fillings is the same recipe as Eclairs on the previous entry. This dessert is very easy to make, no need to use the oven!!

a pack of oreo cookies, we dont need the cream
50g of melted butter

so we basically crush the cookies and add in melted butter in a bowl.
then fill it in the plate and frigde it for half an hour


then we fill in custard fillings

place in sliced bananas

topped it with whipped cream

over the whipped cream is cocoa powder

Chocolate Eclairs and Petite Cream Puffs

elcairs is kinda like a long custard filled french doughnut.
Since it is soft and sweet, it's both mom and my grandma's favorite dessert.
For Thais, we have an image of eclair like a mini cream puffs so I've done both since the ingredients are exactly the same.(apart from chocolate on the topping)

CHOUX

3/4c of cake flour

microwave 1/3 of butter and 3/4c of water in high heat


mix in the flour

wait until the dough is warm

add in 3 eggs

mix it well
bake it for 10-15min at 200c

CUSTARD FILLINGS
combine together 5yolks, 2c of milk,1/3of corn starch, 1/2c sugar
mix it well

set on low heat, gradually stir it, dont stop stirring!
till the custaaard is thick and dense, remove from the heat
and add in 20g of butter
strain it and frigde at least 4 hrs, better over night

whipped a cup of whipping cream and add in custard mixture

cut the choux in half
fill in the custard fillings


CHOCOLATE TOPPINGS
20g od dark chocolate
2T of light syrup
combine both in a bowl and melted in a microwave

Very Soft Chocolate Cake for Chocoholic :))

the recipe is the almost the same as Italian Malt Cake http://sweetscheme.blogspot.com/2010/11/italian-malt-cake-coffeewhite-malt.html
I changed only the flavor ingredients
-add in 20g of cocoa powder together with the dry ingredients
-from 40g of whitemalt to 40g of chocolate milk


On the sauce is pretty much the same too but I add in 60g of dark chocolate melted with 20g of cocoa powder and 20 more grams of sugar

nice and brown 2 lbs chocolate cake

slice it in half

use a medium side spatula to spread the sauce

combine the layers

This recipe is very successful, the cake is super soft with a little sense of coffee and the pudding sauce is not too sweet, whitemalt goes together with coffee really well

Ingredients for 2lbs cake:
cake flour 60g, corn starch 3g, baking powder 1/2t, large eggs 2, sugar 60g, SP 8g,
melted butter 50g, vanilla 2t, white malt/Horlick (dissolve in water/milk) 40g

1) whisk together flour+corn starch+baking powder
through the sieve twice
I used ovantine 3in1 white malt dissolve in 40g of hot water
add in sugar, eggs, vanilla, white malt
beat the batter in a medium speed for 1 min then change it to high speed for 2 min

add in SP, beat it in high speed for another 2 min
the batter will become absolutly white
pour in melted butter (not so hot) beat in high speed for 1min and low speed for another min

pour the batter in the the mold
bake it for 35 min at 180c


Sauce
1) add in whipping cream 150g+ whitemalt (dissolved) 100g+instant coffee 2t+ sugar 50g
+jelly powder 1/2t in a saucepan on medium heat
2) corn starch 30g+white malt (dissolve)150g
add in 2) when 1) is boiled, stir it with the hand mixer
3) optional: add in 40g of butter, let it dissolve in the saucepan
