Strawberry Daifuku


im always a big fan of mochi.i remembered eating almost everyday, 2 pieces a day, during my first semester of college.it's quite expensive compare to the ingredient, so why dont we make our own mochi?!

EASY!!
no-bake
just microwave required:)

step1: what do we need??
canned red bean paste- 1cup (60baht per can at paragon)
glutinous rice flour- 1 cup
icing sugar- 1/3 cup
water- 2/3 cup
fresh strawberries- 10
glutinous rice flour for dusting

step2: how??
1. heat the red beans paste in a small pot, stir it till dry. remove from the heat
2. in a bowl stir together the rice flour and sugar.while mixing with a spoon or small stiff spatula, pour in the water.
3.Cover the bowl with plastic wrap, and microwave for 1 minute.then stir it well and put it back into the microwave for another minute.
4.let it cool a bit and put it in the ziploc bag
5.remove the stem of the strawberries, make sure they are dry
6.coat the strawberries with red beans paste. shaped it like a ball
7.seperate the dough into 10 pieces,stretch and flatten the dough.coat the balls with the mochi dough
8.dust the mochi with glutinous rice flour.
9.ENJOY!!!!!!!!!!
